Chocolate Chip Banana Cake

So this week I was sent an email to participate in a recipe exchange. I normally feel too pressed for time to participate, but this seemed pretty easy – one recipe to one person. Then I forward the letter on to 20 people and they all send a recipe to just the one person at the top of the list. So far I’ve received 5 recipes: Creamy Caprese Quinoa Bake from www.halfbakedharvest.com, Chicken and Artichoke Angel Hair Pasta, Lemon Chicken, Noodle Kugel, and Chocolate Chip Brownie Bars. As you might have guessed, I rushed straight into the kitchen to make Joey’s Brownie Bars. I was having guests for dinner and thought with a tweak here and a pinch there I could convert it into a cake and even make it chocolate chocolate chip! It turned out great and now I’m eager to make the brownies according to the original recipe too! Thanks Joey!

INGREDIENTS
1 stick butter
½ cup white sugar
½ cup brown sugar
1-teaspoon vanilla
1 egg
2 bananas, mashed
4 oz. 62% chocolate, melted (use a double boiler or the microwave – 5 second increments)
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
2 cups chocolate chips

DIRECTIONS

Preheat oven to 350 degrees.  Use the paper wrapper from the butter to grease a round baking pan (8 or 9″).

Using a standing or hand mixer, beat the butter and sugars together for about 4-5 minutes or until light and fluffy.  Add the vanilla and the egg and beat until incorporated.  Then add in the banana.  With the mixer on, slowly drizzle in the melted chocolate.  In a separate bowl, mix the flour, baking soda, baking powder and salt.  Add this to the butter/sugar mixture (I like to mix the dry ingredients into the wet with a rubber spatula first got so you don’t get the flour flying everywhere when you turn the mixer on).  Then beat this just until the flour is mixed in.  Fold in the chocolate chips.  It will be nice and thick.  Add to the prepared pan and bake about 40 minutes.  The center might still be a bit soft.  Allow to cool and serve with whipped cream and fresh strawberries.
