Chicken Salad Roll-ups

This is one of those easy, do-it-in-your-sleep recipes. I’ve been making this chicken salad for years, but mostly for grown-ups. My kids never got into it. I’m always looking for recipes for the kids cooking classes and I thought this would be “interesting to try”, as long as my kids weren’t eating it. Okay, “interesting to try” really translates to . . . it was Tuesday morning and class was in a few hours and I was desperate to find something on the fly. I figured at least one or two of the kids would like it and maybe the rest would at least try it. WRONG!! The kids loved it: slicing apples, dicing celery and rolling up their own wraps. When asked to rate its deliciousness on a scale of 1-10, they all gave it a 10 out of 10 (except one kid who gave it a 6, no hard feelings though!). It really reminds me of the importance of presenting kids with new, tasty options, and giving them a chance to help with the preparation in the kitchen.

I use a rotisserie chicken to make this salad. Basically, I just shred it up and add some apples, dried cranberries, scallions, and celery. I mix in some lemon juice, Greek yogurt, and light mayonnaise. Not only is a rotisserie chicken great for this salad, but you can also make other meals like Kitchen Sink Quesadillas or Easy Chicken and Vegetable Lo Mein. Best of all, I tossed the carcass (skin and wings too) into a large pot with carrots, onion, celery, a bay leaf, fresh thyme, and some black peppercorns. I covered it with water and simmered it about an hour. I was left with 2 delicious quarts of homemade chicken stock. Now if that’s not stretching a dollar I don’t know what is!

Chicken stock

INGREDIENTS
1 rotisserie chicken, shredded (skin removed)
2 apples, diced
2 celery stalks, diced
2 scallions, thin sliced
2-3 tablespoons, cran-raisins
⅓ cup Greek yogurt
⅓ cup light mayonnaise
Juice from 1 lemon
*Trader Joe’s small wraps

DIRECTIONS

In a medium sized bowl, mix together the chicken, apples, celery, scallions and cran-raisins. In a separate small bowl, mix the yogurt, mayo, and lemon juice. Add the yogurt mixture to the chicken and mix well. Spoon some chicken salad into each wrap, roll and serve.
