Rainbow Smoothie

My kids love these fresh, fruit-filled, healthy smoothies. They’ll drink them for breakfast or have them as a snack when they come home from school. I love them too. I often don’t eat enough fruit, especially in the winter when the fruit is bland and unappealing, and this is a great way to add some fruit into your diet. Strawberries and orange juice are filled with vitamin C and fiber. Mangoes have vitamin A, bananas potassium, and blueberries are an antioxidant super-food. I also sometimes add 2 tablespoons of ground flax seeds for protein and added fiber.

1 cup orange juice
1 cup cut-up strawberries
1 banana
1 cup cut-up mango (Trader Joe’s has great frozen mango)
½ cup blueberries
* Add ½ kiwi or ¼ avocado for a splash of green

Put everything in a blender and puree until smooth!

Hi Heather- I am so glad I found you on facebook and that you are doing so well–I read your bio and love how you have developed healthy eating into a career. I love to cook with my kids and trying to get enough fruit and vegetables into their diet is always a challenge! They always want smoothies but when you buy them on the outside they always have so many extra ingredients. I love the recipe you posted and will definitely try it!

I’m so glad you like the recipe! I have another great smoothie recipe that uses 2 handfuls of fresh spinach, 1 banana, 1 cup coconut milk (I buy a purple box from Trader Joe’s), and 1-4oz. container low-fat vanilla yogurt. I’ll post it soon!
