Have I mentioned the “new food blog 15” I’ve acquired? Very similar to the “freshman 15” though much harder to lose! So I thought I’d try some healthy salads this week or maybe some fish (I’m thinking “I-can’t-wait-for-spring-clam-bake”). Instead I made a hearty, not quite diet, breakfast quinoa. This is easy to make in the mornings and kids can choose the fresh fruits they like best. It’s got quinoa, as well as fresh fruits and nuts. That’s great protein, fiber and omega-3’s to start your day! I’d really like to try it with a Meyer lemon whipped ricotta cream on top!
½ cup quinoa, rinsed
½ cup-old fashioned oats
1-cup coconut milk (I use vanilla flavored from Trader Joe’s in the purple box)
1-teaspoon brown sugar
¼ teaspoon cinnamon
1 pinch nutmeg
½ banana sliced (garnish)
1-handful raspberries (garnish)
1-tablespoon pecan pieces (garnish)
Maple Syrup (garnish)
* You can also add shredded coconut, grape nuts, blueberries, blackberries, diced apples, dried fruit, chia seeds, flax seeds, Greek yogurt, honey…
Add all the ingredients into a small saucepan and bring to a boil. Reduce the heat to low, cover and simmer about 15 minutes or until liquid is mostly absorbed. It continues to grow a bit even once it’s removed from the heat. Top with your favorite fresh fruit (banana and raspberry), pecans (or other nuts), and a generous drizzle of maple syrup.
