Chorizo and Red Lentil Soup

More snow coming? Probably. Well now you can be prepared. Every fall, when the weathermen (or weather ladies) predict the next big hurricane, I stock up on provisions. Batteries, flashlights, solar powered radio, matches, candles, bottled water and cookies. When I prepare for a snowstorm, I stock up on Chorizo and Red Lentil Soup, a.k.a Hotdog Soup. I know, very fancy! Best of all, almost everyone in my family enjoys it (except my daughter who doesn’t like meat or spices…go figure!).  It’s super easy, hearty and great anytime of day.  Or all day.

INGREDIENTS
2 tbsp. olive oil
1 onion, diced
2 cups carrots, diced
1-cup celery diced
2 cloves garlic, minced
1-28oz. can tomatoes, diced
8 cups chicken broth
1-1lb package Chorizo (I always look for a nitrate free chorizo like D’Artagnan)
2 cups red lentils

*Try adding different spices like cumin, coriander, ginger or turmeric.

DIRECTIONS

In large soup pot, over medium heat, add olive oil. When hot, add onions, carrots and celery and sauté about 5-7 minutes. Add garlic and sauté another minute. Pour in tomatoes, chicken broth, and chorizo and bring to a boil. Add red lentils, reduce heat and simmer about 30 minutes. Serve with a chunk of crusty bread.
