Homemade Coconut Granola

INGREDIENTS

2 ½ cups old-fashioned oats
¾ cups rice cereal (Rice Crispies)
¼ cup sunflower seeds
¼ cup ground flax seeds
¼ cup shredded coconut
½ teaspoon cinnamon
¼ cup brown sugar
2 tablespoons maple syrup
2 tablespoons honey
1-tablespoon coconut oil, plus a bit to cover the cookie sheet
¼ teaspoon salt
½ teaspoon vanilla

DIRECTIONS

Preheat oven to 350˚. Combine oats, rice cereal, sunflower seeds, flax seed, coconut, and cinnamon in a bowl.  In a small saucepan, heat brown sugar, maple syrup, honey, coconut oil, and salt until just melted together. Remove from heat and add vanilla.  Pour over oat mixture and mix until well combined.  Rub a bit of coconut oil on the cookie sheet. Spread the mixture onto the rimmed cookie sheet (you can also use a silpat sheet). Bake about 20-25 minutes and stir a few times. Let it cool and store in an airtight container.
